Small-Batch Snickerdoodles

Ingredients
- 6 Tbsp. unsalted butter
- 1/2 cup + 2 Tbsp., divided Florida Crystals® Regenerative Organic Raw Cane Sugar
- 1 large egg
- 1/4 tsp. pure vanilla extract
- 1 cup all-purpose flour
- 1 tsp. baking powder
- Pinch of salt
- 2 tsp. ground cinnamon
Directions
- Preheat oven to 350°F. Line one baking sheet with parchment paper.
- In a medium bowl, beat butter and 1/2 cup of Florida Crystals Regenerative Organic Raw Cane Sugar until light and fluffy, for about 2 minutes. Add egg and vanilla and beat until well combined. Scrape the sides of the bowl as needed.
- In a small bowl, whisk together flour, baking powder, and salt. Add flour mixture to butter mixture. Beat until combined.
- In a small bowl, combine the remaining 2 tablespoons of sugar and cinnamon. Using a small ice cream scoop, scoop dough. Roll dough with your hands to form a ball and then roll it in the sugar-cinnamon mixture. Place the ball on the prepared baking sheet. Repeat the process with the rest of the dough.
- Bake for 10 to 12 minutes or until golden brown around the edges. Allow the cookies to cool and enjoy!
Chef's Tip
The recipe can be doubled for a bigger batch of cookies.
