Small-Batch Snickerdoodles

Ingredients

  • 6 Tbsp. unsalted butter
  • 1/2 cup + 2 Tbsp., divided Florida Crystals® Regenerative Organic Raw Cane Sugar
  • 1 large egg
  • 1/4 tsp. pure vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • Pinch of salt
  • 2 tsp. ground cinnamon

Directions

  1. Preheat oven to 350°F. Line one baking sheet with parchment paper.
  2. In a medium bowl, beat butter and 1/2 cup of Florida Crystals Regenerative Organic Raw Cane Sugar until light and fluffy, for about 2 minutes. Add egg and vanilla and beat until well combined. Scrape the sides of the bowl as needed.
  3. In a small bowl, whisk together flour, baking powder, and salt. Add flour mixture to butter mixture. Beat until combined.
  4. In a small bowl, combine the remaining 2 tablespoons of sugar and cinnamon. Using a small ice cream scoop, scoop dough. Roll dough with your hands to form a ball and then roll it in the sugar-cinnamon mixture. Place the ball on the prepared baking sheet. Repeat the process with the rest of the dough.
  5. Bake for 10 to 12 minutes or until golden brown around the edges. Allow the cookies to cool and enjoy!
