Caramelized Banana Chocolate Chip Blondies

Ingredients

For the Caramelized Bananas
  • 4 bananas, peeled and cut into disks
  • 1/3 cup date syrup (can be substituted with maple syrup)
  • 2 Tbsp. walnut oil
  • Pinch of salt

For the Batter
  • Caramelized bananas
  • 1/3 cup tahini (can be substituted with cashew or almond butter)
  • 2 Tbsp. walnut oil
  • 1 Tbsp. vanilla extract
  • 3 eggs
  • 1 box Simple Mills Banana Muffin & Bread Mix
  • 1 cup chocolate chips

For the Chocolate Drizzle
  • 1/4 cup dark chocolate
  • 1 tsp. coconut oil

Directions

  1. PREHEAT oven to 325°F and spray and line a 8×8 square baking pan.  Set aside.
  2. PLACE the bananas, date syrup, walnut oil and salt in a fry pan and cook down until it looks jammy. It will take about 10 minutes.
  3. TRANSFER to a large mixing bowl and cool down to room temperature. Once the caramelized bananas have cooled down MIX in the tahini, walnut oil and vanilla, add in the eggs one at a time mixing well in-between each addition.
  4. ADD once all the eggs have been fully incorporated in the Simple Mills banana mix. Blend in well and then mix in the chocolate chips.
  5. POUR in your baking pan and smooth over the top. Bake for 20 minutes. Take out of the oven and cool to room temperature in the pan.
  6. TRANSFER once it has cooled down to a wire rack. To serve heat up the dark chocolate and coconut oil and drizzle on the top.
  7. CUT into 16 squares. Serve and enjoy!
