Monster Mango Loco Shrimp Tacos

Ingredients

Marinade
  • 2 lbs. (41-45) shrimp
  • 1 can (16 oz.) Monster Mango Loco
  • 1/4 cup oil
  • 3/4 cup lemon juice
  • 4 garlic cloves, chopped
  • 1 Tbsp. salt
  • 1 tsp. black pepper
  • 1 cup achiote paste

Pico De Gallo
  • 2 mangos
  • 2 oz. Monster Mango Loco
  • 1/2 onion
  • 3 jalapeños, seeded
  • 6 Roma tomatoes
  • 1 bunch cilantro
  • 1/2 orange
  • 1 lemon

Directions

Marinade
  1. Combine Monster Mango Loco, lemon juice, chopped garlic cloves, oil, achiote paste, salt and pepper. Add shrimp and place in fridge for 30 minutes.

Topping
  1. Combine fresh squeezed orange and lemon juice along with Monster Mango Loco to remaining ingredients and set to side.

Cooking
  1. Heat pan (no oil), add shrimp and cook for 3 to 4 minutes or until shrimp turn pink.
  2. Heat tortillas and add shrimp, top with lettuce or cabbage, mango pico de gallo, crema and garnish with a lime wedge.
