Brussels Sprouts with Salami

Ingredients

  • 1 pkg. (6 oz.) Fiorucci® 100% Natural Hard Salami Nugget
  • 1 lb. Brussels sprouts, shredded
  • 1/3 cup finely crumbled blue cheese
  • 1/3 cup chopped toasted pecans
  • 1/4 cup thinly sliced red onion

Lemon-Dijon Vinaigrette
  • 1/4 cup olive oil
  • 3 Tbsp. lemon juice
  • 1 small shallot, minced
  • 2 tsp. Dijon mustard
  • 1 tsp. honey
  • 1/4 tsp. each salt and pepper

Directions

  1. Whisk together olive oil, lemon juice, shallot, Dijon mustard, honey, salt, and pepper.
  2. Toss shredded Brussels sprouts with lemon-Dijon vinaigrette; toss with diced salami, blue cheese, pecans and red onion.
