Organic Sea Salt Tortilla Soup

Ingredients

Soup
  • 3 Tbsp. butter
  • 1/3 cup chopped green bell pepper
  • 1/4 cup chopped green onion
  • 1 clove minced garlic
  • 1 bay leaf
  • 1 bag frozen corn
  • 4 Tbsp. flour
  • 1/4 tsp. each oregano & pepper
  • 2-3 drops tabasco sauce
  • 3 cups chicken broth
  • 1-1/2 cup fresh salsa

Toppings
  • Mi Niña Organic Sea Salt Tortilla chips
  • Shredded jack cheese
  • Sour cream
  • Cilantro

Directions

  1. Sauté garlic, green pepper, and onion in butter for 5 minutes.
  2. Stir in flour, oregano, pepper, and tabasco sauce.
  3. Gradually stir in broth, bay leaf and salsa and let cook.
  4. Cook corn in microwave and drain water, add to soup just before serving.
  5. Serve topped with crushed Mi Niña chips, shredded cheese, sour cream, and cilantro and enjoy!
