Vegan Chickpea Blondies
Ingredients
- • 1 can (15 oz.) of chickpeas, rinsed & drained
- • 1/2 cup almond butter (or sunflower butter to be nut-allergy friendly)
- • 1/2 cup pure maple syrup
- • 1/4 cup coconut sugar
- • 2.5 tsp. vanilla extract
- • 1/2 tsp. salt
- • 1/4 tsp. baking powder
- • 1/4 tsp. baking soda
- • 1 cup Biena Dark Chocolate Chickpea Snacks
Instructions
- Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper or spray with nonstick spray.
- In a blender or food processor, blend all ingredients except the Biena Dark Chickpea Snacks until smooth.
- Mix in 3/4 cup of Biena Dark Chocolate Chickpea Snacks into batter.
- Spread batter into pan. Sprinkle the remaining 1/4 cup of Biena Dark Chocolate Chickpea Snacks on top. Lightly press the Chickpea Snacks into the batter.
- Bake for 25-30 minutes until a toothpick comes out clean. Top of blondies should be lightly browned. Sprinkle with flaked sea salt (optional).
