Twice Baked Potatoes

Ingredients

  • 8 Greenfield Natural Meat Co.TM Bacon
  • 4 Yukon gold potatoes, sliced in half
  • 8 eggs
  • 1 cup sour cream
  • 4 Tbsp. butter
  • 1 cup shredded cheddar cheese
  • 3 Tbsp. olive oil
  • Salt
  • Pepper
  • Green onions (garnish)

Directions

  1. Preheat the oven to 350°F.
  2. Bake potatoes in the preheated oven until tender, about 45 minutes, depending on the size of the potatoes. Set potatoes aside until cool enough to handle.
  3. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown.
  4. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save the skin. Add sour cream, butter, salt, pepper, 1/2 cup cheddar cheese, and 1/2 of the green onions to the potato.
  5. Mix until well blended and creamy.
  6. Spoon the mixture into the potato skins. Top each with remaining cheddar cheese, green onions, and one slice of Greenfield Natural Meat Co. Bacon and crack 1 egg.
  7. Return potatoes to the preheated oven and continue baking until the cheese is melted, about 15 minutes.
