Taquito Enchiladas

Ingredients
- 1 pkg. José Olé Corn Beef Taquitos
- 1 can green enchilada sauce
- 1 can refried beans
- 3 cups Mexican blend cheese
- 2 cups sour cream
- 2 Roma tomatoes, finely diced
- 1/2 cup cilantro, chopped
Directions
- Cook 20 taquitos following packaging cooking instructions (or around 8 minutes in an air fryer).
- Heat beans in a medium saucepan, stirring occasionally until heated through.
- Chop cilantro and dice tomatoes, then set aside.
- Pre-heat oven to 350°F.
- When the taquitos are finished, transfer half of your taquitos into a baking pan. Layer half of your beans, green enchilada sauce, and cheese.
- Repeat, layering on the remaining taquitos, beans, sauce, and cheese.
- Place in oven and heat until melted (around 8 minutes).
- Remove the dish from the oven and top with sour cream, tomatoes, and cilantro. Serve and enjoy!
