Summer Elote
Ingredients
- 6 ears corn, shucked and rinsed
- 1/4 cup mayonnaise
- 1/4 cup Mexican crema
- 1/4 cup grated cotija cheese
- 3 tsp. chili powder
- Fresh cilantro, chopped
- Lime wedges, to garnish
Directions
- Start by grilling the ears of corn for 10 minutes over medium-high heat, turning often.
- In a small bowl, mix mayonnaise and crema.
- Remove corn from the grill.
- Brush corn with mayonnaise mixture.
- Sprinkle cotija, chili powder and cilantro on top.
- Serve with lime wedges for zest.
