Summer Elote

Ingredients

  • 6 ears corn, shucked and rinsed
  • 1/4 cup mayonnaise
  • 1/4 cup Mexican crema
  • 1/4 cup grated cotija cheese
  • 3 tsp. chili powder
  • Fresh cilantro, chopped
  • Lime wedges, to garnish

Directions

  1. Start by grilling the ears of corn for 10 minutes over medium-high heat, turning often.
  2. In a small bowl, mix mayonnaise and crema.
  3. Remove corn from the grill.
  4. Brush corn with mayonnaise mixture.
  5. Sprinkle cotija, chili powder and cilantro on top.
  6. Serve with lime wedges for zest.
