Pulled Pork Mac and Cheese

Ingredients

Pepsi Rub
  • 4 Tbsp. Pepsi
  • 1 Tbsp. orange zest
  • 1-1/2 tsp. lemon zest
  • 3/4 tsp. lime zest
  • 1 Tbsp. + 1 tsp. coriander powder
  • 3/4 tsp. nutmeg
  • 1 Tbsp. + 3/4 tsp. cinnamon
  • 2-1/2 tsp. vanilla extract
  • 2-1/2 tsp. salt

Pulled Pork
  • 5 lb. pork butt
  • 2 cups BBQ sauce
  • 1-1/2 cups Pepsi
  • 1/2 cup blended olive oil
  • 1 Tbsp. kosher salt
  • 1 tsp. black pepper
  • 1 lb. mac and cheese dinner box

Directions

Pepsi Rub
  1. Mix all the ingredients in a mixing bowl.

Pulled Pork
  1. Preheat grill to 400°F.
  2. Dry and clean pork butt. Cover with oil and add rub.
  3. Place the Dutch oven on the grill to warm up.
  4. Sear well on the grill for 10 minutes, tuning the pork butt to create diamond sears, 3 minutes between each turn. Grill at 400°F medium-heat.
  5. Remove the pork from the grill and transfer it to the Dutch oven.
  6. Pour the Pepsi rub over the pork and cook with lid.
  7. Cook at 250°F for 1 hour on the grill, covered.
  8. While the pork is cooking, prepare the mac & cheese following the box instructions.
  9. Remove the Dutch oven from the grill and carefully remove the lid (mindful of hot steam.)
  10. Using two forks, shred the meat. Add the BBQ sauce and let it rest for 10 minutes.
  11. Serve the mac & cheese in a bowl and top it with pulled pork.
