No Bake Peanut Butter Truffles

Ingredients
- 1 cup Creamy Crazy Richard’s Peanut Butter
- 3 Tbsp. coconut flour
- 1/4 cup maple sugar
- 1 Tbsp. melted coconut oil
- Pinch of salt
- 1 cup dark chocolate chips
Directions
- Pulse peanut butter, coconut flour, maple sugar, coconut oil, and salt in food processor until all ingredients are combined into a thick “dough.” (Alternatively, can mix by hand.)
- Roll the dough into 1-inch truffle balls and place on a parchment lined baking sheet.
- Freeze until solid; about 30 to 45 minutes.
- While truffles are freezing, melt dark chocolate using a double boiler or in the microwave. Just watch it closely to make sure it doesn’t burn.
- Once the truffles are frozen, coat each in melted chocolate, then place back on the parchment lined baking sheet.
- Freeze for another 10 to 15 minutes, or until chocolate has hardened.
- Eat immediately or keep cold until serving time.
Optional
Cover with festive colored sprinkles.
