No Bake Peanut Butter Truffles

Ingredients

  • 1 cup Creamy Crazy Richard’s Peanut Butter
  • 3 Tbsp. coconut flour
  • 1/4 cup maple sugar
  • 1 Tbsp. melted coconut oil
  • Pinch of salt
  • 1 cup dark chocolate chips

Directions

  1. Pulse peanut butter, coconut flour, maple sugar, coconut oil, and salt in food processor until all ingredients are combined into a thick “dough.” (Alternatively, can mix by hand.)
  2. Roll the dough into 1-inch truffle balls and place on a parchment lined baking sheet.
  3. Freeze until solid; about 30 to 45 minutes.
  4. While truffles are freezing, melt dark chocolate using a double boiler or in the microwave. Just watch it closely to make sure it doesn’t burn.
  5. Once the truffles are frozen, coat each in melted chocolate, then place back on the parchment lined baking sheet.
  6. Freeze for another 10 to 15 minutes, or until chocolate has hardened.
  7. Eat immediately or keep cold until serving time.

Cover with festive colored sprinkles.
