Greek Turkey Bacon Pasta Salad

Ingredients
- 1 pk. Godshall’s Uncured Turkey Bacon
- 1/2 lb. rotini pasta
- Salt and pepper, to taste
- 3 Tbsp. extra virgin olive oil
- 2 Tbsp. red wine vinegar
- 1/2 Tbsp. brown sugar
- 1 tsp. oregano
- 1 English cucumber, thinly sliced
- 1 cup cherry tomatoes, cut in half
- 1/2 cup kalamata olives
- 1/2 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1 Tbsp. chopped dill
Directions
- Boil pasta in well salted water and cook until al dente.
- Brown the turkey bacon and cut into bite-sized pieces.
- Toss with the pasta.
- In a separate bowl, whisk together the oil, vinegar, oregano, a pinch of salt, pepper, and the brown sugar.
- Pour the dressing over the pasta and turkey bacon.
- Add remaining ingredients (cucumbers, tomatoes, olives, onion, feta, dill) and toss.
- Chill in refrigerator and enjoy cold.
